Kona Sweet is the first coffee we have ever processed naturally -- sun-drying the coffee beans in the actual coffee cherry. This is a much longer, labor-intensive process, but after tasting this coffee, we are glad we made the investment.
We start with perfectly ripe cherries, hand sorted to give us our best selection. Over many days, we sun-dry the coffee beans within the coffee cherry. The fruit of the cherry is naturally sweet. As it dries, it accentuates the natural sweetness of the coffee bean. Once the drying is done and the fruit milled off the bean, the result is a sweet, smooth coffee, with hints of blueberry, strawberry, brown sugar and rose.
