The History of Ibex Coffee


The legend dates back to the 9th century in Ethiopia, which is widely recognized as the birthplace of coffee. The story goes that a young goat herder named Kaldi noticed his flock of goats acting strangely after eating red cherries from a particular tree. The goats appeared to be dancing and were full of energy even late into the night. Intrigued by this phenomenon, Kaldi decided to try the cherries for himself. He found that they had a stimulating effect, providing him with an energy boost.


Eager to share his discovery, Kaldi took these cherries to a local monastery. The monk, skeptical of these “magical” cherries, threw them into a fire. As the cherries burned, the monastery was filled with the delightful aroma of roasting coffee beans. The roasted beans were quickly retrieved from the embers, ground, and mixed with water, leading to the creation of the world’s first cup of coffee.


This captivating story of the dancing goats has been passed down through generations and remains a significant part of coffee folklore. It illustrates the serendipitous origins of coffee and our enduring fascination with its stimulating effects.


It’s through such lore and continued exploration that unique coffee varieties like the Hawaiian Ibex Coffee are born, each with their own stories of discovery and passion.






What Is Kona Ibex?

Kona Ibex is a new approach to coffee processing for Heavenly Hawaiian. For the first time, we processed and fermented our coffee with a specialty yeast prior to drying and roasting. Although the details of the process are the brainchild of our Farm Manager and are closely held, the general technique itself is popular among Hawaii coffee farmers, leading 25 of them to enter similar coffees in this year’s Hawaii Coffee Association’s Cupping Competition. And of those 25, Kona Ibex won!


In our first foray into this new processing technique, Heavenly Hawaiian placed 1st among similarly processed coffees, 1st among all Progeny 502 entries (the varietal we entered), 4th among all Kona coffees and 5th among all coffees grown in Hawaii.
